There is a moment every year, in which I don’t know what to bring at the 5th birthday dinner and this is the time where I take this recipe to light.
What you need (for 12ish cupcakes)
- 125 g of butter
- 125 g of flour
- 125 g of sugar
- 2 eggs
- marmalade (or filling of your choice, yes Nutella is okay)
What you do
- Make the butter melt slowly in a pot while you prepare the rest.
- In the meantime, mix together the sugar and eggs in a bowl until smooth, either with a normal whisk or an electric one.
- Add butter to the compost and mix all together until is creamy.
- Add the flour in small amounts each time, work the mixture until it’s dense and creamy (better if the flour is filtered).
- Once you feel ok with the fluffiness of the mixture take the cupcake holders and in each put 1 big spoon of the mixture. Pay attention to not use all the mixture as we will need it after.
- On top of each mixture you already put, add a half a tea spoon of marmalade, better if it sink in the mix.
- With the last bit of batter remained cover each cupcake.
- Put in oven at 180/190 C for 20/25 minutes. (check them constantly)
For the topping, use any recipe you can find. I just mixed a bit of powdered sugar and water.
Goes very well with any function. I did it for birthdays, festivities and even bake sales.
